Lokum (or Turkish Delight) is a soft sweet little cube, tasty and colourful. We are going to share the recipe with you and we suggest to pair it with Turkish coffee.
The Lokum is often paired with tea, coffee or even served by itself, as a sweet treat. If you have read the Chronicles of Narnia, you’d remember it as the sweet the witch used in order to charm little Edmund.
The Lokum goes also under the name of Turkish Delight and has a very ancient origin from the 15th century. It’s a traditional recipe in Turkey but it’s also very popular around the world, especially in the UK. It’s not hard to make it at home, so we are going to share the recipe with you!
The recipe
Traditionally, the Turkish Delight pieces should be of many different colors and served together. This grants you a wow effect when you present them to your guests! In this recipe we are going to give you the basic recipe – one color – but you will be able to play with ingredients and food coloring elements to obtain the other colors a well!
Ingredients:
- 4 1/3 cups of granulated sugar
- 1 cup corn starch
- 4 cups of water
- 3 tbsp powdered jelly
- 2 tbsp lemon juice
- 2 tbsp rose essence
- 1 tbsp crea, of tartar
- 1 tsp red food coloring
- Icing sugar as needed
Method:
- Dissolve the sugar in ½ of the water in a small pot. Do not stir and watch until it gets to 250F. At that moment add the lemon and stir
- In another small pot pour in the corn starch, the jelly and cream of tartar. Add the water little by little and mix until it reaches a firm texture. Add the rest of the water and let it heat at medium heat for a couple of minutes while stirring.
- Add the sugar syrup with jelly and corn starch. Stir everything together. Leave on the heat for 30 minutes and watch as it reaches 230F.
- Pour in the rose essences and the food coloring and stir. Grease a baking tray and pour the mixture on it. Let it cool down and put the baking tray in the fridge for around 6 hours.
- After the time has passed, with a greased knife cut the solid mixture into 1 inches squares and sprinkle them with the icing sugar.
Enjoy!
The Turkish Delight you just prepared will taste so great! If you want to upgrade the recipe a little but you could add in them chopped nuts together with the food coloring and the rose essence.
You could also use coconut flour instead of icing sugar and use different types of food coloring elements to create a colourful presentation!
