Below you’ll find the recipe with 3 different topping suggestions to please everyone!
Ingredients (for 8 people)
The base:
- 2 cups heavy cream
- 1 cup of sugar
- ¾ cup of milk
- 3 tsp ground Caffè Aiello coffee
- 0.3oz gelatine sheets
- 0.1oz vanilla powder
The toppings:
- Cocoa and raspberry
- Cocoa and coffee
- Caramel (see below for the recipe)
Method
Leave the gelatine in cold water for 10 to 15 minutes.
In a non-stick pot pour the milk, the heavy cream, the sugar and the coffee. Mix everything together and put the pot on medium-low heat. Keep mixing the ingredients on the stovetop for about 15 minutes.
It’s crucial that you avoid the pot content to boil. It has to simmer at a steady temperature.
Now you can remove the pot from the heat. Take the gelatine sheets out of the cold water trying to squeeze out all the excess water in them. Add the gelatine into the pot so it can melt in it. Keep stirring from time to time.
At this point you should have gotten a smooth mixture with a creamy texture. Pour it in the 8 moulds you picked. Remember to leave a little bit of space on top. Put them in the fridge and let them to rest for at least 12 hours.
When the 12 hours have passed you can remove them from the fridge and take the panna cotta out of the moulds – be careful, this is the most delicate step! Last think you need to do is to pick your favourite topping among cocoa powder and raspberries, cocoa powder and Aiello ground coffee or caramel.
How to prepare the caramel in order to top your panna cotta?
We are going to give you the recipe for the caramel, if you chose this topping. Remember that caramel can be used for many recipes, so you can save this one for other occasions too!
One recommendation for properly topping a panna cotta with caramel: keep the caramel layer very very thin, or you might spoil your panna cotta’s shape! You can just drizzle a couple of tsp of caramel on the panna cotta and you should be good.
In order to prepare some caramel you just need to melt ¾ cup of white sugar into a glass of water in a small pot while stirring the mixture on the stovetop (medium heat). Once the sugar has melted, you’ll wait for the water to evaporate. You know the caramel is ready when the mixture colour turns into red-light brown. Remove it from the stovetop and pout it over the panna cotta – be fast or it will solidify!
