Who says there’s an appropriate time to enjoy something sweet? Any moment of your day is perfect to indulge in some coffee, almond&vanilla Italian cookies!
Might it be midnight or midday, these cookies will be your snack of choice! Find out how to perfectly combine the excellent taste of coffee with vanilla and almonds’ sweetness.
We all know that coffee is not only a great hot beverage, but it also has significant useful proprieties, why not having an extra coffee sip then, but in a cookie-way?
Here the ingredients for 7oz of cookies:
- Sugar, ¾ cup
- Egg, 1
- Vegetable oil, ¼ cup
- Espresso coffee, ¼ cup (our Aiello Classico blend would be our coffee of choice, which is available as ground and capsules)
- Flour, 2 cup
- Almond flour, ¾ cup
- Vanilla extract, 1 tsp
- Yeast, 1/16 cup
- Pinch of salt
And now, let’s bake:
- Whisk the egg while adding the sugar, few tbsp at time
- Pour vanilla in and start stirring
- Add the espresso and keep mixing until the colour is homogeneous
- Continue by adding the oil and mix until it’s absorbed
- Little by little, add the flour and make sure not to allow any lump
- Add what is left: almond flour, yeast and salt, keep stirring until your dough is homogeneous
Here you are! Let the dough rest for more or less 5 mins. After the time has elapsed, get creative and shape your cookies in any way you like: use a cookie cutter or shape them freehand (pssst: just create dough balls and press them with your hand or any other tool!)
Turn on the oven at 350F, while it reaches the temperature, let your cookies rest on their baking pan for ten minutes. Once the oven is ready, let them cook for 15/20 minutes. Remember, when checking on them, just rely on your eyes: never open the oven door, you’d mess up with leavening!
Once they look done, take them out and let them rest for some more 40 minutes far from the oven: let the cookie-scented air tickle your appetite!
